BBQ Pizzas

I tried this out when I spent last summer in Los Angeles. Was far too hot to keep the oven going and everybody had a gas BBQ so this was an ideal recipe. It's great for kids parties or a grown up pizza party as they work best when you make an individual pizza and everybody can build their own pizza! For this recipe i'm just going for an easy Margherita, but you can add whatever you want.

Ingredients
Pizza dough (see my other posts)
Pomodoro sauce (see my recipe)
Monterey Jack cheese (cheddar is just as good)
Parmesan or Pecorino cheese
Salad to serve (I like to use rocket)

Method
Dust your work surface and rolling pin with plain flour and roll out your pizza dough into individual rounds (don't worry about a perfect shape, square pizzas would fit on the grill better!)

Warm your pomodoro sauce on the hob and grate your cheese.

If you've got a gas BBQ set it to a medium heat. If you use coal then you can work with a high heat just be careful not to char your pizza base.

Bring all the ingredients to the BBQ. You can either use olive oil but I found those 'low cal' spray oils work best for this- brush your pizza base with olive oil or spray with the oil spray and place on the BBQ.

Don't try to move the base too early otherwise it'll just stick to the grill and fall apart so after a minute use your spatula and see if you can ease the base from the grill. When you can, spray/brush. the side of the base that's up with oil

Straight away spread the pomodoro over the base and top with cheese. Close the lid on the BBQ and allow it to cook until the cheese has melted.

Transfer to a plate and top with Salad.
