Salad Dressings

As a kid I used to be hooked on Thousand Island salad dressing. With age I realised how tasty, fresh and easy homemade Salad Dressings are! 

I always work on the ratio of 3:1 being 3 parts oil to 1 part vinegar and then I allow for a teaspoon of emulsifier such as honey or mustard. Make sure you use extra virgin olive oil unless mentioned- not because of the health benefits but its packed full of taste! Here are a few of my favourite and easy dressings. Just add the ingredients together, give a good stir and pour over a great salad!

French Dressing
3 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tsp Dijon mustard
Salt and pepper to taste

Honey & Mustard
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp wholegrain mustard
1 tbsp honey

Balsamic
3 tbsp extra virgin olive oil
1 tbsp balsamic oil
Salt and pepper to taste

Mediterranean
3tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp honey
2 tsp red pesto
1/2 tsp tomato ketchup
